Ingredients:

- 1/2 teaspoon kosher salt (omit if using self-rising flour with added salt, or if your homemade self-rising flour already includes it)
- 1 cup milk (full-fat is recommended for best results)
- 1/2 cup vegetable oil (or canola oil, alternatively, 1/2 cup melted unsalted butter for a richer flavor)
- 1 large egg (preferably at room temperature)
- 1 teaspoon vanilla extract (pure vanilla extract for superior flavor)
- 1 1/2 cups fresh or frozen blueberries (if using frozen, do not thaw them first)
For the Zesty Lemon Glaze:
- 1 cup powdered sugar (also known as confectioners’ sugar)
- 2 tablespoons fresh lemon juice (or more, added gradually, to achieve your desired drizzling consistency)
Instructions:
- Preheat Oven & Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Line a 12-hole standard muffin tin with paper liners or silicone cups. Set the prepared tin aside.
- Combine Dry Ingredients: In a large mixing bowl, whisk together the self-rising flour (or your custom blend of all-purpose flour, baking powder, and salt), granulated sugar, salt, and finely grated lemon zest until all ingredients are thoroughly combined.
- Combine Wet Ingredients: In a separate, smaller bowl, whisk together the milk, vegetable oil (or melted butter), large egg, and vanilla extract until the mixture is smooth and well-emulsified.
- Mix Batter & Add Blueberries: Pour the wet ingredient mixture into the large bowl containing the dry ingredients. Stir gently with a spoon or spatula until the ingredients are *just* combined and a thick batter forms. Be careful not to overmix; a few lumps are perfectly fine and contribute to a tender muffin. Gently fold in the fresh or frozen blueberries until they are evenly distributed throughout the batter.
- Bake the Muffins: Divide the muffin batter evenly among the 12 prepared muffin liners, filling each approximately two-thirds full. Place the muffin tin into the preheated oven and bake for 20 minutes, or until the tops are golden brown and spring back lightly when gently touched. You can also insert a wooden toothpick into the center of a muffin; if it comes out clean, they are fully baked.
- Cool & Glaze: Once baked, remove the muffin tin from the oven and allow the muffins to cool in the tin for 5 minutes. Then, carefully transfer them to a wire cooling rack to cool completely. While the muffins are cooling, prepare the glaze: in a small bowl, stir together the powdered sugar and fresh lemon juice until the mixture is completely smooth and free of lumps. Adjust the consistency with a little more lemon juice or powdered sugar as needed. Once the muffins are completely cool (or at least warm, not hot), generously drizzle the lemon glaze over each one before serving.

- You have the flexibility to use either fresh or frozen blueberries in this recipe. When fresh blueberries are in season, they are often my personal favorite for their vibrant pop of flavor.
- For consistent baking results and a beautifully uniform appearance, try to measure the muffin batter so that each liner contains a roughly equal amount. Using a large cookie scoop works wonderfully for this purpose.
- It’s important to avoid overfilling the muffin liners. Make sure to leave enough room for the muffins to puff up and develop those desirable, beautiful domed tops while baking, preventing any spillage.
